Pumpkin Energy Bites

The weather has finally turned to cooler temperatures, the leaves are starting to change colors and pumpkin spice is everywhere you turn. It’s definitely fall and we could all use a little comfort food every once in a while.

While I love pumpkin, I don’t love the preservatives and added flavors evident in most store-bought pumpkin treats. Our pumpkin energy bites are delicious and packed full of protein, folic acid, Omega -3 essential fatty acids, fiber and will satisfy your pumpkin spice cravings.

 

 

 

Pumpkin Energy Bites

Ingredients

  • 3 cups rolled oats
  • 1 cup pumpkin puree
  • 1 cup natural peanut butter or other nut butter
  • 2/3 cup honey or maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice (see recipe below)*
  • 1 tbsp vanilla extract
  • 1/4 cup ground flax seed
  • 1 cup coconut flakes
  • 1/2 cup chocolate chips (regular or mini)

Directions

  1. Combine all the ingredients in a bowl and mix until well combined.
  2. Roll into 1 inch balls.
  3. Place on cookie sheet lined with parchment paper and freeze or place in the fridge to harden.
  4. Store in an airtight container in the fridge up to a week or in the freezer.

Make 28-32 energy bites. Serving size one to two balls.

 

* I never have pumpkin pie spice on hand and prefer to make my own.

Pumpkin Pie Spice

2 tsp ground ginger

2 tsp ground nutmeg

1 1/2 tsp allspice

1 1/2 tsp ground cloves
