Organic Pancakes


My kids love pancakes.  I do too!  These pancakes are easy to make, are nice and fluffy and taste way better than any mix out there.

  • 1 1/4 cups all-purpose organic flour
  • 3 1/2 tsp baking powder
  • 3 Tbsp sugar
  • 1/2 tsp salt
  • 1 1/4 cup milk
  • 1 egg
  • 3 Tbsp melted butter

Optional: 1/3 cup peanut butter or 1/3 cup bananas or 1/3 cup applesauce

Combine flour, baking powder and salt.  In a separate bowl combine the milk, sugar, and egg (plus peanut butter, bananas or any other added flavor ingredient).

Gradually, combine the flour and egg mixture.  Slowly add in the melted butter.

Cook on a hot griddle. Serve with syrup or fruit spread.

At our house, we make these pancakes will all organic ingredients.

We also like to make the entire batch and then freeze the leftovers.  Then during the week we simply take out how many pancakes we need, heat them up in the microwave or toaster oven and the kids have a hot breakfast.
