Energy Bites
Search Pinterest for Energy Bites and the site will reward you with hundreds of different pins and pictures of all types of “bites.” Our favorite are easy to make and use ingredients that we normally have in the pantry. My children love them and will ask me to make these for them at least once a week.
No-Bake Energy Bites Recipe
Ingredients:
1 cup rolled oats
1 cup coconut flakes
1/4 cup ground flaxseed 1 tbsp chia seeds
1/4 cup wheat germ
1/2 cup chocolate chips (or dried fruit)
1/2 cup peanut butter (or any nut butter)
1/3 cup honey (or maple syrup) 1 tsp pure vanilla extract
Directions:
Mix all the dry ingredients in a bowl together (oats, ground flaxseed, wheat germ, coconut flakes, chia seeds, and chocolate chips.
Next, mix the honey, peanut butter, and vanilla together.
Add the wet ingredients to the dry ingredients, and mix it all together. You can use a spoon or your hands. You many need to add more peanut butter or honey to get the mixture to the right consistency.
Once it’s mixed together, place in the fridge for 30 minutes. Once chilled, you can “roll” into bite-sized balls. (I normally wet my hands with some cold water and sort of pat them into balls.
Makes between 18-24 bite-sized energy bites.
You can replace the chocolate chips with your favorite add in.
